Nice to see an Anglophone so much interested in the Quebecer language! As of your addition about "chu" and since you obviously think it is pertinent, I durst move it to Phonetics, and I also added some background info and the je sais/ché example in order to illustrate that this is a systematic phenomenon in Quebec French, and not just some barbarian pronunciation.
